CP Kelco has introduced Kelcogel HS-­B gellan gum, a hydrocolloid system made with gellan gum that has been designed to provide suspension of soy, cocoa and minerals in ready-to-drink neutral pH soy-based beverages. Kelcogel HS-B gellan gum functions at low use levels to impart minimal mouthfeel without adversely impacting flavor.
